Tarhanadan \u00f6nce ilk olarak T\u00fcrk mutfa\u011f\u0131n\u0131 k\u0131saca tan\u0131yal\u0131m.<\/p>\n\n\n\n<h2>T\u00fcrk Mutfa\u011f\u0131<\/h2>\n\n\n\n<p>T\u00fcrk mutfa\u011f\u0131, ya\u015fad\u0131\u011f\u0131 de\u011fi\u015fik b\u00f6lgeler ve dini durumlar\u0131yla hem etkilemi\u015f hem de etkinlenmi\u015ftir. G\u00f6\u00e7ebe mutfak k\u00fclt\u00fcr\u00fcnden, Anadolu\/Sel\u00e7uklu miras\u0131ndan, Bizans gelene\u011finden, \u0130ran-Abbasi mutfak k\u00fclt\u00fcr\u00fcnden, Osmanl\u0131dan olmak \u00fczere y\u00fczy\u0131llar boyu de\u011fi\u015fmi\u015f, zenginle\u015fmi\u015f ve olgunla\u015fm\u0131\u015f bir k\u00fclt\u00fcrd\u00fcr. Akdeniz, Orta Asya, Kafkasya, Arap ve Ortado\u011fu \u00fclkelerinin yer ald\u0131\u011f\u0131 geni\u015f bir co\u011frafyadan etkilenen T\u00fcrk mutfa\u011f\u0131n\u0131n geleneksel besinleri bu zamana kadar ula\u015fmay\u0131 ba\u015farm\u0131\u015ft\u0131r. Ayr\u0131ca T\u00fcrk mutfa\u011f\u0131na ait geleneksel besinlerin haz\u0131rlama, pi\u015firme ve saklamas\u0131 da kendine hast\u0131r. Geleneksel besinler hem lezzetli hem de besleyici de\u011feri y\u00fcksek olan yiyecek ve i\u00e7eceklerdir. \u00d6rnek olarak pekmez, tarhana, \u015falgam, \u015f\u0131ra, boza verilebilir. Bu durum tarhanan\u0131n bozulmas\u0131n\u0131 veya patojen mikroorganizmalar\u0131n ya\u015famas\u0131na izin vermemektedir. Bu da tarhanan\u0131n 1-2 y\u0131l kadar bozulmadan saklanabilmesini sa\u011flamaktad\u0131r.<\/li>\n<\/ul>\n\n\n\n<p>Baz\u0131 tarhanalar\u0131n rengi, yap\u0131s\u0131, tad\u0131 vb. de\u011fi\u015fik olmaktad\u0131r. Bundan dolay\u0131 kan \u015fekerini ve kolesterol dengesini sa\u011flar.<\/li>\n\n\n\n<li>Gluten i\u00e7ermez. Bu y\u00fczden <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC8814222\/\" target=\"_blank\" rel=\"noreferrer noopener\">\u00e7\u00f6lyak hastalar\u0131<\/a> daha rahat t\u00fcketmesini sa\u011flar.<\/li>\n\n\n\n<li>Besin i\u00e7eri\u011fi sebebiyle ya\u015fl\u0131, hasta veya \u00e7ocuk beslenmesinde kullan\u0131l\u0131r.<\/li>\n<\/ul>\n\n\n\n<h3>Tarhanada dikkat edilmesi gerekenler<\/h3>\n\n\n\n<ul>\n<li><strong>Tuz i\u00e7eri\u011fi b\u00f6lgelere g\u00f6re veya yapana g\u00f6re de\u011fi\u015febilir:<\/strong> \u00c7ocuklar\u0131n ve hipertansiyon hastalar\u0131n\u0131n y\u00fcksek tuz i\u00e7eri\u011fine sahip tarhanalardan ka\u00e7\u0131nmas\u0131 gerekir.<\/li>\n\n\n\n<li><strong>Depolamaya dikkat edilmesi gerekir: <\/strong>Uygun ko\u015fullarda depolanmamas\u0131 veya uzun s\u00fcreli depolan\u0131rsa aflatoksin olu\u015fumu olabilir. \u00d6zellikle ba\u011f\u0131\u015f\u0131kl\u0131k sistemi d\u00fc\u015f\u00fck olan ki\u015filerin dikkatli olmas\u0131 \u00f6nemlidir.<\/li>\n<\/ul>\n\n\n\n<h1>SONU\u00c7 OLARAK<\/h1>\n\n\n\n<p>Tarhana, T\u00fcrk mutfa\u011f\u0131nda geleneksel fermente bir \u00e7orbad\u0131r. \u00d6zellikle besleyici de\u011feri toz halindeyken y\u00fcksektir. Fakat genelde \u00e7orba olarak t\u00fcketildi\u011fi unutulmamal\u0131d\u0131r Glisemik indeksi d\u00fc\u015f\u00fck oldu\u011fu i\u00e7in kan \u015fekerini dengesini sa\u011flad\u0131\u011f\u0131 i\u00e7in t\u00fcketilebilir. Tuz i\u00e7eri\u011fi, tarhanay\u0131 yapan ki\u015fiye g\u00f6re de\u011fi\u015fti\u011fi i\u00e7in i\u00e7eri\u011fi okumak bundan dolay\u0131 \u00f6nemlidir. Hipertansiyonu olan ki\u015filerin d\u00fc\u015f\u00fck tuz i\u00e7eri\u011fi olan tarhanay\u0131 se\u00e7mesi \u00f6nemlidir.<\/p>\n\n\n\n<p>Ayr\u0131ca baz\u0131 b\u00f6lgelerde bebeklere anne s\u00fct\u00fcnden sonra ilk besin olarak verilmektedir. Bebeklerin ba\u011f\u0131\u015f\u0131kl\u0131k sistemi daha tam olu\u015fmam\u0131\u015ft\u0131r. Tarhanan\u0131n yap\u0131m a\u015famas\u0131 ve depolamas\u0131nda zehirli madde olan aflatoksin olu\u015fabilir. Bu y\u00fczden bebeklerin t\u00fcketmesi zararl\u0131 olabilir. Bebek beslenmesinde bir ya\u015f\u0131ndan \u00f6nce tuz t\u00fcketimi \u00f6nerilmemektedir. Tarhanan\u0131n da tuz i\u00e7eri\u011fi y\u00fcksek olabildi\u011fi i\u00e7in dikkatli olunmal\u0131d\u0131r.<\/p>\n\n\n\n<p>Tarhanan\u0131n hem yap\u0131m a\u015famas\u0131na hem de depolanmas\u0131na dikkat edildi\u011fi takdirde t\u00fcketilebilecek pratik fermente bir \u00e7orbad\u0131r.
